Start Your Day With This Shishito Breakfast Burrito

Two words can get even the grumpiest of us out of bed in the morning: breakfast burrito. And this shishito-packed version, created by Hungryrooter Jessica H., just may be one of the tastiest we’ve tried. Made entirely with ingredients you can get in your delivery, it can be whipped up in mere minutes—and devoured in seconds.

Serves 1

You'll need: 

White Corn Tortillas

Pasture-Raised Liquid Whole Eggs (or Plant-Based Liquid Eggs)

Shishito Peppers

Red Potatoes

Any toppings of your choice, like Shredded Sharp Cheddar Cheese or Green Chile Sauce

  1. Microwave potatoes according to package instructions. Once cooked, season with salt/pep + carefully chop into cubes. 
  2. Wash + dry ½ bag of shishitos; heat 1 tbsp oil in skillet over high heat, sauté peppers 8-10 min until black/blistered in places + slightly softened; season with salt/pep + chop up.
  3. In a lightly oiled skillet over medium heat, pour in 1 cup eggs + salt/pep; cook undisturbed until eggs around edges begin to set, about 1 min; stir eggs until curds form + no liquid remains, about 2 min.
  4. Divide eggs, potatoes, and peppers between tortillas; top with anything you’d like; roll up + enjoy!
